Uncommon Knowledge: When Did We Start Putting Proof in Our Pudding?

The pot calling the kettle black. A stitch in time saves nine. She saw the light. There’s no shortage of idioms—phrases that mean more than the sum of their parts—in the English language. But while some are more or less self-explanatory, others are far more perplexing. Chief among them: The proof is in the pudding. What proof? What pudding? Why would one hide anything in pudding?

There’s a logical reason this one doesn’t quite add up. Over the centuries, the phrase was shortened from the original: “The proof of the pudding is in the eating.” In other words, if you want to know if the pudding is any good, you have to try it out. Hence the current phrase’s meaning that something (say, a plan) can’t be deemed successful until it’s put into action. The original proverb hails from about 14th century Britain, back when the word “proof” meant “test” and “pudding” could also mean “sausage”. Which, in medieval times, was something that really, really needed to be tested before being fully consumed.

Ah the days of the Romans, when they would recline at the table for their one square meal a day. That’s right—one. We may take the idea of eating three meals a day for granted now, but it’s a relatively new phenomenon. Back in the Middle Ages, before the dawn of electricity, humans rose early to make the most of the daylight. By midday, with six hours or so of work under their belts, people would break for their meal—the largest and usually the only. But as artificial light entered the game in the 19th century, the wealthy started shifting their days and the main meal was consumed at later and later times. As such, the custom of mid-day snacking arose. By the time the Industrial Revolution hit, workers needed calories to continue working further into the evening hours. That’s when lunch went mainstream in the Western world. As for the idea of the hallowed family dinner, we have the 1950s to thank for that. No matter what and how much of it you eat when, enjoy it—and rest assured that you’re not breaking any longstanding biological traditions.

Uncommon Knowledge: Why Does That Little Star Twinkle Twinkle?

“Twinkle Twinkle Little Star” got it all wrong. Stars, it turns out, simply sit pretty and quite still (for burning balls of plasma, that is) above Earth’s atmosphere. When their light passes through the atmosphere, however, it goes through multiple layers of varying densities. Those layers bounce the light around like a pinball machine, making it change color and density. So by the time the light reaches our eyes, it appears to scintillate. This sparkly atmospheric trick is especially strong when stars are on the horizon line. One particularly bright star, Sirius, “twinkles” so much in fact, that’s it’s frequently reported as a UFO.

Marion Cage McCollam considers herself a designer first, an artist second. “By that, I mean that I am more of a problem solver,” the Columbia University-trained architect says. “My background defines my work in that there is always a technical as well as a creative component to everything I do.” In other words, whether the New Orleans resident is making hardware for a home, a dog tag for a beloved pet, or a ring for a human, she pushes herself to achieve elegance in form and function.

Marion developed her fluid yet strong sensibilities when she was in her 20s working under world-renowned architect Zaha Hadid, who created the Aquatics Centre for the 2012 London Olympics among myriad other celebrated structures. “She was a mentor to me,” says Marion. After Hadid’s untimely death in March 2016, Marion found herself creating a special series: “My latest jewelry collection was inspired by the forms I was introduced to when working for her.” It’s the elegance of these shapes, as well as Marion’s thoughtfulness, that sets her work apart. The designer and Big Easy shop owner tells us about her ultimate influence and the creative process behind her latest work.

Watercolors of the United States: Renee Leone’s Paintings

Renee Leone’s perfect world is a natural one. “I love landscapes and vast panoramic views and being able to see to the horizon,” the Chicago-based painter says. “Being outside with nature invigorates me and truly inspires me.”

Happily for the rest of us, Renee translates that inspiration into vibrant watercolors. Her geometric yet playful renderings of everything from redwood forests to desert cacti to urban seasides delight viewers — which is exactly why Renee creates. “I love hearing from people who have purchased or admire my work, and having them tell me they enjoy it,” she says. “When I see art that moves me, it’s a very cool feeling. I love knowing that my work does that for other people.” She colors in the rest of her story for us.

When did you first realize you were an artist?
I’ve loved art since I was a child and won awards in elementary school for my art. I always had this feeling inside I was very creative and artistic, although I didn’t really think I was good enough to be an artist. My self doubt kept me from pursuing a creative field. But I couldn’t shake the fact that I needed to do something more creative, and I wanted to learn to “really” draw. [After earning my bachelor’s in communications], I enrolled in design school. When I finally did learn to draw technically, I realized this is truly what I should be doing and I couldn’t believe it took me so long to realize I was an artist and needed to follow this path.

Uncommon Knowledge: When Did Chocolate Become Hot?

Centuries before scientists began dissecting chocolate in the lab (It fights belly fat! It helps your attention span! It aids workouts!), a certain form of it was considered the pinnacle of health food: hot–okay, warm–chocolate.

In southern Mexico between 3,000 and 4,000 years ago, people of the Olmec civilization ground nibs from the cacao plant into a paste, mixed it with water, then poured the substance back and forth between two jugs to achieve froth. Olmecs believed the substance contained mystic properties, hence it was saved for VIPs to consume during sacred ceremonies.

From the Olmecs, the drink spread to the Mayans and then to the Aztecs, whose leader—Montezuma II—was, perhaps, its most famous historical fan. The emperor was known to guzzle goblets of the stuff–and share only with soldiers so they could reap the concoction’s strengthening benefits. After Hernán Cortés conquered the Aztecs (who added sugar–unknown to the Aztecs–to the brew), he brought the chocolate sensation to Spain, where it soon spread throughout Europe.

Back in the Americas during the Revolutionary War, medics administered hot chocolate to wounded soldiers due to its perceived health benefits. (Benjamin Franklin even recommended the satisfying sip as a cure for smallpox in his 1761 edition of Poor Richard’s Almanac.

All this to say, science may be pretty sweet — but our chocolate instincts are even sweeter.
